Honey Process Coffee

Honey processing is a method where the coffee cherry’s outer skin is removed, but most of the sticky mucilage (or “honey”) is left on the bean. Instead of being fully washed off, this sugary layer is preserved and the beans are slowly dried on raised beds, allowing them to absorb more sweetness and complexity from the remaining fruit. Once partially dried, the coffee is then finished in rotating mechanical driers to ensure consistency and even moisture levels. The result is a cup that often showcases a round, syrupy body with vibrant fruit notes and a clean finish — a beautiful balance between washed and natural coffees.--
