Granja Paraíso 92 – Colombia

Granja Paraíso 92 is a family farm owned by celebrated producer, Wilton Benitez, who uses highly innovative cultivation techniques such as terraces, drip irrigation, shade growth and laboratory generated soil nutrition, etc all aimed at producing precise coffees of character.

For this washed Red Bourbon lot, along with Wilton’s coffee cherries, neighbouring producers have supplied cherry. The coffee undergoes a relatively lengthy fermentation of around 36 hours, leaving us with a coffee of pronounced aromatics and complexity. There’s plenty of fruit, and thankfully a balancing level of acidity giving the coffee clarity, and an adult profile – so don’t think bubblegum, think Beaujolais.
